Lonzino is the back part of pork loin and it is made of a lean part which is partially enveloped by a thin layer of fat. It's flavor is tipically delicate and mild.
After the salting, the loin is covered over with chopped herbs (rosemary, garlic and sage) until the end of the seasoning. They give the lonzino a very nice and special scent.
